KALOS BIANCO

 

GRAPES    

40% MALVASIA, 40% TREBBIANO,

20 % MOSCATO GIALLO

 

ALCOHOLIC STRENGTH           12%

 

Old vineyard and old vines – vine density 2,500 per hectare – regrafted at 230m above sea level on calcareous clayey soil, facing south.   Double arched-cane training system. Yield per hectare 80 quintals. Grapes selected and harvested by hand and stored in small plastic crates.   Vinification done at early harvesting, refrigeration and cooling of bunches at a temperature of -1°C/-2°C following the ‘ice wine’ technique, cold defecation, start of fermentation at low temperatures.   Maturation 3-4 months

 

Pale straw yellow colour.

 

Aromas coming from the vines of origin with a hint of white flowers of hawthorn and rose, and orange tree flowers.

 

Bouqueted, with a good sweetness, structure and length, balanced and delicious in the mouth.

 

Food pairings: starters, fish, pizza and focaccia, vegetarian dishes, paté de fois gras, blue cheeses, white meat and pasta dishes. Serve also as an aperitif.

 

Serving temperature 10°/12°C

 

Production: about 2,000 0.75cl bottles.
