100% MOSCATO GIALLO
The Vineyard is at 230 m above sea level, with a southern exposure.
Combed cordon and Guyot training system. Yield per hectare 25/30 quintals. Harvest of surmature grapes stored in small plastic crates during the first ten days of December.
The fermentation starts in stainless steel barrels, then continues in French oak new barriques, until the ‘mutage’. The wine is preserved in barriques until its 3rd year.
Colour: intense yellow, almost amber.
Aromas of honey, dates, caramel and ‘muffato’ sensations.
Food pairings: biscotti, ‘crostate’ with citrus fruits jams, ‘crostate’ with thick custard, ‘cantuccini’ biscuits, goat cheese, pecorino and blue cheeses.
Serving temperature 15 / 18° C
Production: about 1,000 0.375l bottles.
